No. 10 — The GRINTO Kitchen

Microgreen paratha

A soft whole-wheat paratha flecked with sweet pea shoots. The greens go into the dough, not the pan, so they stay bright.

20 minMakes 4Pea shoots
Stack of golden microgreen parathas with yoghurt and pickle
Made with Pea shoots — Sweet, tender, tastes like spring peas.

Ingredients

  • 2 cups whole wheat flour
  • 1 cup finely chopped pea shoot microgreens
  • ½ tsp ajwain or cumin seeds
  • ½ tsp red chilli powder
  • Salt to taste
  • Warm water, as needed
  • Ghee for cooking

Kitchen note — Chop the shoots finely and mix them in just before kneading — overworking dulls the colour.
